Tonight I Dined: Cosmic Coconut

Cosmic Coconut is a vegan smoothie bar in Memphis that serves up some light food options too. I went for breakfast and ordered the granola bowl with coconut milk topped with blueberries. This was so simple and tasty, with most of the sweetness coming from the fruit. I'm definitely going to try to adapt this bowl in my own kitchen for a healthy breakfast!
