Happy Passover ✡🍷

Last night was the 2nd night of Passover and I got busy in the kitchen making a festive holiday meal. This year I skipped the seder plate (but not the obligatory glasses of wine, L'Chaim Y'all), and made soup, salad, entree, and dessert. All the recipes I followed were vegan, except the Algerian Mahkuda, which I substituted tofu for the eggs.

Course 1: Asparagus lemon soup
Main: Roasted beet salad with Harissa-potato pancake
Dessert: Pineapple and pear crumble with matzah topping and coconut sorbet
