I found a great vegan blog/Youtube, Revolution in Bloom, that specializes in traditional Cuban dishes. Since I had some left over soyrizo from my caldo verde soup recipe, this dish was a perfect way to use up the rest! I altered the recipe somewhat to my tastes, but I think I honored the spirit of Garbanzos Fritos. I served it immediately with fluffy rice and a lime wedge. It was so delicious and hearty with a side of spice, I'm glad I got to eat the leftovers for another few meals!
