Deconstructed Sloppy Joe
I think I managed to take the fun out of sloppy joes, by deconstructing it and putting it in a bowl. No worries, though...if you still want to get messy, no need to use a fork. JK! I didn't have much on hand in the fridge, but feel free to get creative with your toppings. How do you like your joe?
Cole Slaw
1/4 head small cabbage or 1/2 package cole slaw mix
2 Tbsp vegan mayo
1 Tbsp apple cider vinegar
pinch sugar
salt
black pepper
1. Stir all ingredients well and refrigerate.
Joe
1 12 oz package meatless beef crumbles
1 onion (diced)
1 can Manwich
black pepper
garlic powder
sesame seeds (optional but this is the stand-in for the sesame seed bun)
0. Stir all ingredients for cole slaw well and refrigerate.
1. In a medium skillet add 1-2 tsp of oil and heat to medium.
2. Add onion and cook until beginning to brown.
3. Add crumbles and cook until browned.
4. Add 1/2 to whole can Manwich sauce to taste. Add black pepper and garlic powder.
5. Serve over rice with cole slaw and some sesame seeds.
