Inspired By Isa Spicy Noodles
This recipe is inspired by Isa Chandra Moscowicz...she has a video up on her YouTube channel for Dragon Noodles. The recipe looked great, but I made a few substitutions: lomein instead of rice noodles (because I think they will hold up better to the sauce), sambal oelek chili sauce instead of sriracha (I like sriracha as a condiment, but do not like cooking with it), and I added charred bell peppers and scallions. It is meant to be eaten cold, so make this dish in advance (of you being hungry) and let marinate in the fridge for a few hours!

2/3 package vegan lomein noodles (my pack came in 3 bundles, use 2 of them)
2 1/2 -3 Tbsp sambal oelek chili sauce
2-3 Tbsp natural peanut butter
1 tsp agave
1 tsp soy sauce
1 1/2 tsp sesame oil
dash garlic powder
1 cucumber (peeled and cut into matchsticks)
2 small red bell peppers (charred on the gas stove, skins removed, and cut into matchsticks)
4 romaine lettuce leaves (shredded)
handfull cilantro (chopped)
3-4 scallions (chopped)
1. In a small food processor add sambal, peanut butter, agave, soy sauce, sesame oil, and garlic powder. Pulse and set aside.
2. Cook lomein according to package, drain into colander and rinse well with cold water. Set aside.
3. In a large bowl add noodles, peppers, cucumber, romaine, cilantro and scallions. Pour over sauce and toss to coat well. Stick in fridge for several hours.
