Zucchini Gratin

This recipe was really just an excuse to try out Daiya provolone slices...I've had the cheddar and mozzarella shreds many times before and I especially enjoy them on pizza. The verdict: this cheeze is very yum, although the taste is quite similar to the mozzarella!

Zucchini Gratin
3 medium zucchini
1 handfull basil (chopped)
fresh ground black pepper
nooch or pam nooch (nooch+garlic powder+cashews)
Daiya cheese (I used provolone slices)

0. Preheat oven to 350 F.
1. Cut zucchini into thin, even rounds.
2. Brush EVOO onto baking dish. Organize zucchini rounds evenly on baking dish and sprinkle with salt, nooch and pepper.
3. Bake 15 minutes. Add chopped basil and toss.
4. Add cheese in an even layer on top. Put back in the oven until cheese is all melty.
