Something I Tried: Cauliflower Rice
I know everyone has been going nuts over Cauliflower Rice (i.e. cauliflower chopped up into rice shaped bits). I picked up a bag from the refrigerated vegetable section at my local Trader Joe's and sautéed them in a pan with a little oil as per the directions on the bag. It took a while for it to cook, and it definitely didn't get as tender (or fluffy) as regular rice. When I tasted it from the pan I thought, no way would this pass as rice. Then I served it up with some red beans and hot sauce. Yum, yum, yum, it actually worked really well as a rice replacement. I mean, I wouldn't eat this every time, but I would swap this for real rice every once and a while for a lighter meal option.
