Something I Tried: Green Curry Paste

I haven't had as much time to cook lately, so I've been integrating some set-it-and-forget-it meals into my routine. Pre-made sauces and pastes make it really easy to infuse a lot of flavor into your dish with little effort. Sure, it's never quite as good as homemade, but if it takes half the time, or less...I'm down!

I found some Dragonfly brand Thai green curry paste at HMart* and put it to use right away. I cooked potato, cauliflower florets, onion and frozen green beans in the spicy paste that I thinned into a sauce. I didn't need to add additional spices, and it was on the salty side, so no soy sauce was necessary. I garnished the dish with fresh cilantro and a lime wedge and served it atop rice. I'm not saying this was restaurant quality, but unless you have some lemongrass and galangal root lying around, you wouldn't be able to achieve these delicious flavors...and I loved every bite!

*Just a reminder that not all pre-made pastes will be vegan, and often shellfish is a hidden ingredient in some Asian inspired sauces, so read the labels!
