Something I Tried: Forks Over Knives Indian Zuppa with Tomatoes and Fava Beans

I tried another recipe from the Forks Over Knives cookbook: Indian Zuppa with Tomatoes and Fava Beans. I loveee fava beans, I could eat them every day with tahini, lemon and a sprinkle of sea salt. The fava was present in the soup, but this dish was really all about the leeks. I also added more garlic and spices than the recipe called for, held the quinoa, and served the broth over steamed rice with some fresh cilantro.

Recipe Rating: Like a lot. A little light on flavor, and I would add different spices next time.
