Kimchi Fries

I was dreaming about kimchi fries all day because I (1) had a potato I needed to use, and (2) had a jar of kimchi chilling in my fridge. I was inspired by the menu of a fusion food truck in Houston. I have seen many people eating kimchi fries...and now I was going to become one of them. 

I love an excuse to eat french fries as my main, and not relegate them to being just a side. Spicy, creamy, crunchy this dream dish has it al: 10/10 these were outrageously good.

Kimchi Fries 1 large russet potato
green onions (chopped with white and green parts separated).
2 tsp smoked paprika
1/4 tsp cumin
1/4 tsp oregano
white pepper
black pepper
coconut oil spray
kimchi
2 Tbsp vegan mayo
1-2 tsp sriracha
sesame seeds
sea salt

0. Preheat oven to 350 F.
1. Carefully slice potato into french fries (I left the skin on). Rinse a few times under cold water and then let sit in cold or ice water for at least 10 minutes. Drain and pat dry very well.
2. Toss with paprika, cumin, oregano and a pinch of white & black pepper. Spray with coconut oil or toss with 1-2 tsp oil.
3. Bake for at least 30 minutes or until they reach your desired crispiness. Flip several times during baking (if they are sticking toss with a little more oil). In last 5 minutes of baking add the white part of green onion.
4. Take the fries out of the oven, toss with sea salt.
5. Make an aioli by combining mayo and sriracha and stirring well.
5. Top fries with kimchi, aioli, sesame seeds and green onion.
