The Lovin' Spoonful: Gumbo

Any recipes made especially for me will now be under the heading The Lovin' Spoonful, because these are dishes made with extra love. Kids, if you don't know who The Lovin' Spoonful is please click here and here and here (sound familiar?).

For today's edition of The Lovin' Spoonful I present gumbo. My bf toiled for over half an hour stirring the roux, and if you've never made a roux, it is constant work. The vegan gumbo was full of okra, celery, bell peppers, onions, black eyed peas, and red beans. My addition to the meal was cornbread from a boxed mix (always check the vegan-ness of mixes, some have lard). We crumbled it over the gumbo and served it up with some green onions.

Speaking of Cajun food, Twitter informed me of the existence of the world's first and only 100% vegan Cajun restaurant. It's located in L.A. (please come to Houston) and is called Krimsey's. I am salivating over the menu, and decided I haven't lived until I eat their voodoo beignets.
