Tonight I Dined: Family Edition Episode 2

This post is a little sumthin' special because it is the second guest chef article I'm featuring on the blog! I handed over the reins to my kitchen and my sister made me a dish inspired by the flavors of Spain. The main dish she prepared was espinacas con garbanzos, made with spiced chick peas and tomato with wilted spinach. She served a side of asparagus topped with a bright romesco sauce. The dish was very well balanced, with a tartness and smoky spice from the chickpea dish and sweetness from roasted red peppers highlighting the romesco. I would definitely make something like this for myself because it was hearty and tasty, and a nice break from my typical rice and bean dishes! Delicioso!
