One of my all time favorite cuisines is Indian food. I like spicy curries, but one of my favorite dishes is Aloo Gobi, with mildly spiced cauliflower and potatoes. For the most part, I followed this recipe, but subbed fresno chili that I had on hand for the serrano and cooked it longer with more water. The nice yellow color is from turmeric and the fragrance is herby from the cilantro. Real talk, this was so rich and so, so good. It tasted even better the next day as all the flavors intensified. Although, I would probably stick to the serrano next time to add additional heat. It is so good that I may add this to my weekly rotation because it is a delicious set-it-and-forget-it dish full of the flavors I love!
