'Tis the season on the Gulf Coast for crawfish boils. Not to be left out, I made myself a vegan version with yellow corn, baby red potatoes, white button mushrooms, and onions. After boiling in the traditional spicy, lemony boil water, I drizzled on some vegan garlic butter and cajun seasoning before serving. I ate it with lots and lots of garlic bread and have no regrets about this buttery meal. It was spicy perfection!
