Simple Caesar Salad
Mmmm creamy salad dressings are the best. This take on Caesar uses tahini and is rich with a pop of acid from the lemons. And the best part...leave your knives in the block because you do not have to cut anything!
Caesar Dressing
2 lemons
1 Tbsp nooch
3 Tbsp tahini
2 tsp vegan Worcestershire
1-2 Tbsp dijon mustard
2 tsp garlic paste (fresh or jarred)
generous black pepper
1 package romaine hearts
1 can low sodium garbanzo beans
1 package whole wheat vegan croutons
optional: ripe avocado, more nooch!
1. In a dressing shaker add all ingredients. Shake. You may want to thin with a little water.
2. In a large bowl rip 3 romaine hearts into bite-sized pieces. Add beans, croutons and optional ingredients.
3. Toss well with dressing. Let sit in the fridge for 20 minutes so the croutons soak in the moisture.
