Grilled Pita French Toast

I love weekend breakfast. I sleep in a little late, and wake up very hungry! I had the patience this morning to make something instead of grabbing toast, yogurt or cereal. This is my take on french toast, and it has the most amazing banana-cinnamon flavor. It is ultrarich from the soy butter and maple syrup I dipped it in. Feel free to use any bread, but thick white pita I found from my local Central Market works fantastically on the griddle, anything too thick won't cook all the way through!

Grilled Pita French Toast
3 large thick pitas
2 very ripe bananas
1/2 C soy milk
1/2 tsp cinnamon
1/2 tsp real vanilla extract
Earth balance soy butter

1. In a blender add bananas, soy milk, cinnamon and vanilla. Blend until  it is well combined and smooth (~30-45 s)
2. Cut pita into quaters and dip each in banana mixture (in a shallow bowl), and coat thoroughly.
3. Heat a griddle to low-medium and add soy butter. When it has melted, toss on pitas (but first shake off over bowl any excess liquid).
4. Grill for about 2 minutes on each side or until golden brown.

Pro Tip: Serve with real maple syrup, powdered sugar, or make your own stawberry sauce.
