Presto Chango Pesto

This pesto was created by accident...on the car ride home from the grocery I realized I forgot basil. What started as a mistake ended in the sweetest kitchen surprise. This cilantro & arugulaIt is better than any pesto I have ever tasted! So light and herby with a kick of spice from the arugula.

1 1/2 C cilantro (rinse and remove stems)
1 1/2 C arugula
2 tsp veg stock
1/4 C EVOO (or more!)
1/4 C pine nuts
1 lemon (juice)
1 1/2 tsp salt
generous black pepper

1. Cook pasta according to directions.
2. Add all ingredients into blender or food processor and pulse until smooth and thick.
3. Add pesto to skillet and add pasta, toss until incorporated and warm.
