Vegan Gumbo

Okra okra okra! Gumbo is easy to make...you just have to have patience as it simmers away while the veggies get tender. And customize it! Make it as mild or spicy as you want and serve with fragrant rice and hot sauce.

Vegan Gumbo
1 lb okra (tops and ends removed and cut into 1/3 inch thick rounds)
4 poblano peppers, or green bell peppers (chopped)
1 onion (chopped)
6 cloves garlic (minced)
3 celery sticks (chopped)
1 pint grape tomatoes (halved)
1 box veggie broth
5 Tbsp Earth Balance butter
1/4 C EVOO
1/2 C white flour
1 Tbsp sweet paprika
2 tsp cayenne
Tony Chachere's (or your fave cajun seasoning)
salt
fresh ground black pepper

1. In a large stock pot make the roux: melt butter, EVOO and add the flour. Whisk constantly for 10 minutes over low heat making sure it browns nicely but doesn't burn.
2. Add the onions, peppers, garlic, and celery. Cook for 10 minutes, stirring frequently.
3. Add tomatoes paprika, cayenne, cajun seasoning and pepper. Cook for 3-4 minutes. 
4. Add veggie broth and bring to a low boil. Immediately turn to low and simmer for an hour, adding more liquid if necessary. Add more salt and pepper to taste.
