The Tonight I Dined series is welcoming its first family kitchen post. And the featured chef...my sister! The dish: a delightfully prepared Asian-inspired entree of cashew tofu on a bed of cauliflower rice. The verdict: the tofu was perfectly chewy and tossed with the right level of sauce, the veggies crisp and full of flavor, and the cauliflower rice a tasty, healthy alternative to white rice.
