Minestrone Soup

I love the mild nutty flavor that the garbanzo beans give to the soup (but you may want to stick with the traditional kidney bean). I served the soup with a generous sprinkle of vegan parmesan. 

green beans
1 zucchini
1/2 onion
2-3 stalks celery
5 cloves garlic
1 can garbanzo beans
cavatelli pasta

1 qt vegetable stock
14 oz diced tomatoes in juice (fresh or canned)
juice of 1 lemon
dash hot sauce (I love Cholula chili-garlic)
olive oil 

1/2 bunch fresh Italian parsley
2 tsp red chili flakes
1/2 tsp celery seed
2 tsp dried rosemary
ground black pepper
