Happy Chanukah 2017!
Happy 1st night of Chanukah! Of course I started my celebration tonight with latkes, although my main was not festival-of-lights themed (it was leftover spaghetti).
I had my own potato pancake recipe from last year, but misplaced it, so I needed an alternate recipe! I made the latkes following this recipe and used Bob's Red Mill Egg Replacer for the eggs. It turned out fantastic!
I also made my own applesauce using tart Grannysmith apples, cinnamon and agave. I whipped it up last night so that it was nice and chilled for the latkes to be dipped into this evening!
