Pearled Couscous with Cranberries and Zucchini
This is an amazing flavor combination and once again, a very simple recipe. This is great as a side dish or on its own. It would be delicious with other veggies too!
Pearled Couscous with Cranberries and Zucchini
Serves 2
Ingredients:
1 1/4 C Israeli Couscous (the grains are larger than traditional couscous)
1/3 C craisins
1/2 zucchini, diced
1 3/4 C low sodium vegetable broth
1 small red onion, diced
fresh garlic, garlic powder
fresh black pepper
fresh cilantro
olive oil
Directions:
1. Heat saucepan to medium. Add 2-3 Tbsps olive oil.
2. Add uncooked couscous and cook about 5 minutes
3. Add broth to saucepan and bring to a boil, then turn down heat and let simmer 10-13 minutes
4. In a skillet with a little olive oil add zucchini, onion and garlic. Cook about 10 minutes or until tender. Add black pepper.
5. Add veggies to couscous. Toss in craisins and fresh cilantro and serve hot
