Italian Wedding Soup

This is a hearty soup that is very delicious all year round. Also very quick and easy to make. Would be great served with garlic bread!

Italian Wedding Soup

Serves 4-5


10 Cups Low Sodium Vegetarian Broth
1 can whole tomatoes, cut into medium chunks (keep liquid)
3/4 package frozen spinach, thawed
1 medium onion, chopped
1 cup uncooked small pasta or orzo
20 frozen vegan meatballs
3 cloves fresh garlic, minced
oregano, to taste
olive oil

1. In medium saucepan cook pasta/orzo until very al dente

2. In large stockpot heat a few tablespoons of olive oil on medium

3. Add onion and garlic and brown

4. Add frozen meatballs and cook till slightly browned

5. Add broth, tomato liquid, tomato chunks and spinach

6. Simmer for about 15 minutes, stirring occasionally

7. Add cooked pasta/orzo and simmer soup for another 5 minutes

8. Add oregano or any additional spices to taste
