Crunchy Peanut Butter Cups

There are several versions attempting to "veganize" peanut butter cup candies. I enjoy this recipe because of the unique crunchiness the graham cracker crumbs add. These quickly become everyone's favorite dessert!

Crunchy Peanut Butter Cups
Makes about 12

7 Tbsp vegan sugar
3/4 C creamy peanut butter
1 C orginal graham cracker crumbs
3/8 C earth balance soy butter
1+ 1/8 C choco chips
1/4 C vanilla soy milk

1. In saucepan over medium heat add sugar, peanut butter, graham crumbs and soy butter

2. Heat until well mixed, stirring constantly. Then remove from heat

3. Line cupcake pan with paper liners. Add peanut butter mixture to cupcake liners so they are about 2/3 full

4. Fill another saucepan halfway with some water. Place a small metal bowl over top of pot. Turn on heat to medium-high

5. To the small metal bowl add the chocolate chips and soy milk. Stir until very smooth.

6. Pour over peanut butter mixture

7. Refrigerate several hours
