Louisiana Vegetable Boil

I was inspired by crawfish boils that are traditional this time of year around the Gulf Coast. This vegan version is incredibly hearty and a very easy to make. The only hard part is waiting for it to be ready! 

Boil seasoning
2 tsp mustard powder
2 tsp cayenne
2 tsp cumin
2 tsp smoked paprika
1 1/2 Tbsp cajun seasoning (I used Tony Chacheres)
3 large lemons (cut in half)

1 onion (quartered)
3 parsnips (peeled)
10 baby red potatoes
4 ears yellow corn
1 small jar of artichokes (drained)

1. In a large pot, bring 3-4 qts water to boil.
2. Add all seasoning and vegetables (except artichokes). Squeeze the lemons and then also drop them in the water.
3. Boil until everything is tender.
4. In last few minutes of cooking add artichokes.
4. Serve with a lot of hot sauce!
