Rustic Red Beans and Rice
This is a hearty, delicious meal that is quite spicy! It is guaranteed to fill your belly after one plate, but it will have you coming back for seconds :) Enjoy!
Ingredients
1 large green bell pepper
1-2 red chili peppers
2 cloves garlic
1 small yellow onion
1 can red kidney beans (drained and rinsed)
1 can fire roasted diced tomatoes
2 tsp smoked paprika
1 tsp cayenne
1 tsp cumin
1/2 tsp granulated garlic
2 tsp hot sauce (I use chili garlic Cholula!)
fresh ground black pepper
coarse sea salt
Instructions
1. Heat olive oil in large non-stick skillet
2. Add diced peppers, onion and garlic and sauté until they begin to brown
3. Add paprika, cayenne, cumin, granulated garlic, salt and black pepper and cook for another minute or two allowing the spices to coat the veggies
4. Add beans, tomatoes and hot sauce and cook on low for 15 minutes
5. Serve with jasmine or basthmati rice
