Something I Tried: Trader Joe's Thai Green Curry Sauce

I made the decision to brave the crowds of my local Trader Joe's with my casted leg and knee scooter. At this point in my recovery I'm no longer embarrassed to roll around and attract attention. Cue Watch Me (Whip/Nae Nae).

I got a bunch of new delicious items in my haul. I'm excited about finding uses for the garlic dip, so stay tuned for that. Trader Joe's recently reformulated their Thai Green Curry simmer sauce, and while it isn't labelled as vegan, it seems to be (unless the sugar isn't verified--which it's not in a lot of products), so check out the ingredients below for yourself.

I sautéed zucchini and crimini mushrooms, then added the sauce to simmer. It was quick and took about 20 minutes start to finish (so make sure you start cooking your rice early on). I garnished it with fresh cilantro and went to town.

This sauce is creamy and mild on the tongue with a slight back-of-the-throat spice that lingers a bit. It has a great depth of flavor and you can really taste the lemongrass. For a $1.99 jar of pre-made sauce, this was delightful. I think it would be especially delicious with other veggies like potatoes or tofu.
