Trader Joe's "No Cook" Cuban Black Bean Bowl

This recipe is perfect for a hot day when you don't want to turn on the oven or stove, and you want something heartier than a salad! Instead of rice, the "starch" is a cauliflower mash, so the dish is somewhat low carb but very filling. All of the ingredients I got from Trader Joe's, and I got 2 full meals out of it! Enjoy this easy dish :)

Cuban Black Bean Bowl
1 can cuban black beans
1 ripe avocado
fresh 'hot' pico de gallo
1 bag cauliflower florets
nooch (optional)
salt
fresh ground black pepper

1. Microwave the bag of cauliflower florets 4-5 minutes (they should be very soft)
2. In a medium bowl carefully dump hot cauliflower (the steam will be very hot from the bag), add salt and black pepper (optional: nooch and 1 tsp vegan butter)
3. Use an immersion blender and pulse until cauliflower mixture has the texture of mashed potatoes.
4. Add mixture to a small bowl and layer on the drained cuban black beans. Heat in the microwave until beans are warm ~1-2 minutes.
5. Add sliced avocado and pico de gallo.
Pro tip: Forget the fork, use tortilla chips as your utensil!
