Nachos N' Sprouts

This was a simple dish that took only 10 minutes from beginning to final assembly! The freshness of the sprouts is an amazing contrast to the crisp chips. Delicious...

Nachos N' Sprouts
1 can low sodium black beans (drained and rinsed)
2 handfulls spinach (ripped into bits)
1/2 bell pepper, diced (optional)
3 cloves garlic
1 tsp smoked paprika
1/2 tsp cayenne
2 tsp Cholula chili-garlic sauce
coarse black pepper
salt to taste
multigrain nacho chips

toppings:
alfafa sprouts
avocado
salsa
hot sauce*

1. Heat some olive oil in a skillet. Add beans, spinach, pepper, garlic, and spices.
2. Assemble in bowl: chips, bean mixture, salsa, sprouts, and lots of hot sauce!

*I have to recommend Yellow Bird Sauce made in Austin, TX. It is so full of flavor without being vinegar-y like a lot of hot sauces and condiments.
