Sunday Brunch: Coconut Berry Oatmeal and Green Refresh Smoothie

This healthy Sunday brunch took about 10 minutes to make. Quick and delicious, the coconut milk adds a fragrant richness to the oatmeal.

Oatmeal

1 C quick cooking oats
2 C water
dash salt
1 Tbsp light brown sugar
1/4 tsp cinnamon
1 Tbsp light coconut milk
blackberries (optional)

1. Bring water and dash of salt to boil. Add oats and cook following directions on package (probably 2-3 minutes).
2. Add brown sugar, cinnamon, coconut milk, stir gently to heat through
3. Serve immediately with berries as garnish

Green Refresh Smoothie
1 cucumber, peeled and cut into large chunks
1 ripe banana
1 large handful spinach
1/4 C frozen peach
1/4 C frozen raspberries
6 oz apple juice
3 oz water

1. Just blend!!
