Shepard's Pie
Two words: Shepard's Pie. You may not know what this is, but give it a try and it'll beome your new go-to dish, the combination of protein, veggies and mashed potatoes makes this a hearty comfort food that is irresistable.
Shepards Pie (makes 2 large or 3 small portions)
4-5 Russet potatoes
soy margarine (Earth Balance)
unsweetened soy milk
1 medium onion, diced
1 package frozen peas
1 package vegan ground beef crumbles or about 15 crushed vegan "meatballs"
2 cups vegan vegetable broth (I used 2 small boxes of KitchenBasics)
few dashes soy sauce
1 Tbsp cornstarch
vegetable oil
fresh ground black pepper
salt
*garlic paste and garlic powder (optional, but gives the mashed potatoes a kick!)
To make mashed potatoes
1. In a medium saucepan begin boiling water
2. Peel potatoes, rinse and cut into medium size cubes
3. Put potatoes in boiling water and cook until tender
4. Drain water from potatoes. In large bowl add potatoes and a few spoonfuls of margarine. Begin mashing
5. Add soymilk until you've reached a preferred consistency
6. Add salt and fresh black pepper to taste
7. Add a small amount of garlic paste and garlic powder (optional)
To make ground "beef" filling
1. Pour a small amount of oil into large skillet and turn heat to medium
2. When pan is hot add diced onions and brown
3. Add ground "beef" or diced meatballs and brown
4. Add 2 tsps margarine and cornstarch, mix well until powder is soaked up
5. Add few dashes of soy sauce (not too much!) and ground black pepper generously
5. Add vegetable broth, and keep cooking until mixture is reduced to a thick sauce
Assembling
1. Lay down mashed potato layer, then pour on ground "beef" filling and surround with cooked peas
