On the Road
Now that I'm officially settled, I can announce that I have moved from the Lone Star state to New England. While Connecticut is much closer and more similar to where I grew up, after 7 years in Texas, it feels funnily foreign to me.
Additionally, the adjustment from living in a city with over 2.3 million people and an area of over 600 square miles will be great...luckily, there are smaller towns with a lot of character all over Connecticut, and NYC and Boston are only a short train ride away.
I will of course miss my favorite food spots in Houston: Local Foods, Quan Yin, San San Tofu, and Aladdins, to name a few. But I am looking forward to all the new vegan goodies I will try in my new home. The excitement for the newness just outweighs my sadness for leaving something so familiar, the place that had come to be my home. Stay tuned for tons of new content as I sample new favorites.
Meanwhile, I was on the road for about a week driving from Houston to the Northeast. To sum it up, here are a few food highlights of the trip:

order the spring roll bowl (crispy cauliflower over fresh greens, brown rice, cucumber, shredded carrot, green onion, cilantro, crushed peanuts, fresh avocado, lime, basil and mint topped with peanut sauce)

order the seitan banh mi with mac and cheeze
