This delicious salad is inspired by the Chipotle salad bowl (which I never get, because I love the burrito bowl and it's massive amount of rice). It starts with a base of crispy romaine topped with brown rice, black beans, marinated artichokes, sautéed mushrooms, garlic, fresh cilantro and charred red peppers. I topped it with a lime cilantro vinaigrette, chili garlic Cholula and Chipotle Cayenne Parma. There is sooo much flavor, and I love the way the warm rice and veg make the salad experience totally different than just eating cold, raw veg!
